Turkey escalope with green beans and boiled potatoes (diabetics)

Ingredients

  • 880 g peeled potatoes
  • 7-10 Tbsp Salt
  • 600 g frozen green beans
  • 50 g Breakfast bacon in slices
  • 1 TABLESPOON Olive oil
  • 2 peeled red onions
  • 2 TABLESPOONS Butter
  • 1 tablespoon (15 g) Flour
  • 7-10 Tbsp Pepper
  • 4 (175 g each) Turkey escalope
  • 1 small bunch of chives

Directions

    Wash the potatoes, cut them into smaller pieces if necessary and cook them in boiling salted water for about 20 minutes. Cook the beans in plenty of boiling salted water for 7-10 minutes until al dente. Cut bacon into pieces. Heat the oil. Leave the bacon in the oil until crispy. Remove the bacon and let it drip off on kitchen paper.

    Set the pan aside. Halve onions and cut into strips. Take the beans out, quench and drain. Measure 350 ml cooking water. Melt 1 tablespoon of butter in the pot. Fry the onion until transparent. Dust with flour and sweat it on. Deglaze with cooking water while stirring. Add beans, simmer for 1-2 minutes, season with salt and pepper. Fold in bacon and put aside in a closed saucepan. Wash the meat, dab dry and cut in three. Season with salt and pepper.
