Tomato soup with noodles and sausage

Ingredients

Servings: 4
  • 1.5 kg Tomatoes (e.g. bottle tomatoes)
  • 2 Garlic cloves
  • 1/2 bunch Oregano and thyme
  • 150 g Italian salami
  • 2 TABLESPOONS Olive oil
  • 2 TABLESPOONS Tomato paste
  • 1 TEASPOON Instant vegetable stock
  • 7-10 Tbsp black pepper
  • 150 g Pasta (e.g. Ditali)
  • 7-10 Tbsp Salt
  • 1 pinch Sugar

Directions

    Clean tomatoes, scratch skin crosswise. Pour boiling water over the tomatoes. Quench cold, peel skin and dice tomatoes roughly. Peel garlic and dice finely. Wash herbs and dab dry, put something aside for garnishing, chop the rest finely.

    Peel the skin off the sausage, cut the sausage into slices. Heat oil in a large pot. Brown the sausage briefly, take it out. Briefly sauté garlic and herbs in frying fat. Add tomato puree, sweat briefly.

    Add the tomatoes, add 250 ml water. Add broth, season with pepper and cook covered for about 20 minutes. Cook pasta in boiling salted water according to package instructions. Drain and let drain.

    Puree the soup, season to taste with salt, pepper and sugar. Add the sausage and noodles and warm up in the hot soup. Garnish with set aside herbs.
