Wash, clean and slice the tomatoes. Clean and wash the rocket. Peel and finely dice onions. Roast pine nuts in a pan without fat. Season vinegar with salt and pepper.
Whip the oil underneath bit by bit. Fold in pine nuts and raisins. Finely slice the cheese. Arrange tomatoes and rocket on a large plate. Spread vinaigrette over it. Sprinkle with cheese.
