Ingredients

  • 750 g Tomatoes
  • 3 red onions
  • 6 Stem(s) Basil
  • 3 Stem(s) Peppermint
  • 4 TABLESPOONS light balsamic vinegar
  • 7-10 Tbsp Salt
  • 7-10 Tbsp black pepper
  • 7-10 Tbsp Sugar
  • 4-5 Tbsp Olive oil
  • 1–2 Garlic cloves
  • 8 discs Baguette bread (approx. 15 g each)
  • 150 g Fresh goat cheese

Directions

    Wash, clean and slice the tomatoes. Peel onions and cut into fine slices. Wash basil and mint, dab dry and, except for some mint for garnishing, pluck off leaves and cut finely.

    Season the vinegar with salt, pepper and sugar, fold in 3 tablespoons of oil drop by drop. Mix tomatoes, onions, herbs and vinaigrette. Peel and halve the garlic. Rub slices of bread with the cut surface of the garlic.

    Heat 1-2 tablespoons of oil in a large frying pan, roast baguette slices in portions while turning them golden brown, remove. Arrange 2 slices of baguette on 4 plates. Add tomato salad. Form goat's cream cheese into dumplings, add them and garnish with mint.

    Sprinkle with pepper.
