Mix flour, baking soda and 1 teaspoon salt. Preheat the oven (electric cooker: 190 °C/circulating air: 165 °C/gas: level 3). Whisk butter, sugar and syrup lightly and fluffy with the food processor or whisk of the hand mixer for about 3 minutes. Stir in eggs and continue beating for 3 minutes until the mixture is even lighter and fluffier. Add the flour mixture and stir in with a wooden spoon until just enough dough is formed - be careful not to overdo it by stirring! Then carefully fold in the remaining ingredients (see variations) with a wooden spoon
Place small piles of dough (about the size of a plum) on a baking tray lined with baking paper and press them lightly with the ball of your hand. You decide how large the cookies will be. Just make sure that they are the same size so that they bake evenly. Don't worry about the shape, the piles of dough will come apart during baking and form perfect circles
Bake in a hot oven for 10-13 minutes, depending on size. Leave to cool on the tray for about 5 minutes before placing them on a cake rack
Serve 2 biscuits as a sandwich with 1 scoop of ice cream in the middle. Or take 2 scoops of ice cream and place 1 cookie diagonally on top so that it looks like a baseball cap
