Ingredients

  • 2 Eggs
  • 1/4 l Olive oil
  • 1 TABLESPOON Capers
  • 3 Gherkins from the jar
  • 1 collar Chives
  • 1 TEASPOON Wine vinegar
  • 7-10 Tbsp Salt
  • 7-10 Tbsp Pepper

Directions

    Boil eggs hard, quench and peel. Halve the eggs and remove the yolk. Pass the egg yolk through a sieve. Stir oil drop by drop into the egg yolk until a creamy mixture is formed.

    Chop egg white, capers and cucumber very finely. Wash the chives and cut into fine rolls. Add all ingredients to the egg mixture and mix. Season with white wine, salt and pepper
