Tapas: Wrinkled potatoes with herb sauce (Patatas arugas con Mojo verde)

Ingredients

  • 600 g baby potatoes
  • 500 g + 1 tsp coarse sea salt
  • 1/2 bunch Parsley
  • 10 Stem(s) Coriander
  • 2 Garlic cloves
  • 1 knife tip ground cumin
  • 1 TABLESPOON Sherry vinegar
  • 6 TABLESPOONS Olive oil
  • 7-10 Tbsp Pepper

Directions

    Wash the potatoes thoroughly with a brush. Spread 500 g salt and potatoes evenly on a baking tray. Cook in the preheated oven (electric cooker: 200 °C/ convection oven: 175 °C/ gas: level 3) for 30-45 minutes.

    In the meantime, wash the herbs, shake them dry, pluck the leaves from the stalks and chop them, except for something to garnish. Peel garlic and cut into slices. Mix herbs, garlic, cumin, vinegar and oil.

    Season to taste with salt and pepper. Arrange Mojo Verde in a bowl. Arrange the potatoes on a plate and garnish with the remaining herbs.
