Mix 500 g flour, 1 pinch of salt and decorating sugar, up to 2 tablespoons. Warm 75 g butter, sugar and milk lukewarm. Crumble yeast into it and dissolve. Add yeast milk to the flour mixture. Knead everything to a smooth dough. Cover the dough and let it rise in a warm place for about 30 minutes
Grease a springform pan (approx. 20 cm Ø; 7.5 cm high) and dust with flour. Knead the dough briefly with your hands and place it in the form. Cover and leave to rise in a warm place for another 30 minutes.
Whisk the egg yolk and cream. Spread the dough with it, sprinkle with the rest of the decorating sugar. Bake in the preheated oven (electric cooker: 200 °C/circulating air: 175 °C/gas: level 3) for approx. 45 minutes. Cover after approx. 25 minutes if necessary. Let them cool down
