Peel the orange so that the white skin is completely removed. Remove the fillets with a sharp knife between the parting skins. Squeeze the juice out of the parting skins. Wash the mint, shake dry, remove leaves except for something to decorate, pluck from the stalks and cut into strips
Mix quark, mint, honey and 1-2 tablespoons orange juice. Halve the toasti and toast. Cover with quark and orange fillets. Sprinkle with hazelnut leaves
