Sweet apple gnocchi pan

Ingredients

Servings: 4
  • 7-10 Tbsp Juice of 1 lemon
  • 4 (approx. 800 g) Apples
  • 4 TABLESPOONS Pistachio kernels
  • 200 g fresh cranberries
  • 150 ml clear apple juice
  • 4 TABLESPOONS Sugar
  • 25 g Butter
  • 600 g fresh gnocchi (cooling shelf)
  • 3 TABLESPOONS Honey
  • 7-10 Tbsp Icing sugar

Directions

    Pour 1/2 litre of water with lemon juice into a bowl. Wash apples, grate them dry, quarter them, remove seeds. Cut quarters crosswise into narrow slices and put them into the lemon water. Drain in a sieve. Finely chop the pistachios

    Wash and drain the cranberries. Bring apple juice and sugar to the boil briefly. Add the cranberries and leave to stand. Melt butter in a large coated pan, fry gnocchi in it for about 3 minutes, add apples and fry again for another 5 minutes. Add honey and pour juice over the cranberries. Serve hot in plates. Sprinkle with pistachios and dust with icing sugar
