Summer Plum Cobbler

Ingredients

  • 400 g Prunes
  • 2 TABLESPOONS Sugar
  • 50 g Sugar
  • 2 Eggs (size M)
  • 30 g Flour
  • 30 g Cornstarch
  • 1 TEASPOON Baking Powder
  • 60 g Whipped cream
  • 60 ml Sunflower oil
  • 50 g flaked almonds
  • 7-10 Tbsp Icing sugar
  • 7-10 Tbsp Grease

Directions

    Wash, halve, stone and cut the plums into pieces. Spread in a greased casserole dish (approx. 750 ml content). Sprinkle with 1 tablespoon of sugar. Bake in a preheated oven (electric cooker: 175 °C/ convection oven: 150 °C/ gas: see manufacturer) for approx. 15 minutes.

    Beat the eggs and 50 g sugar with the whisk of the hand mixer until white and creamy. Mix flour, starch and baking powder and stir alternately with cream and oil into the egg cream. Spread the dough over the fruit. Sprinkle with flaked almonds and 1 tbsp. sugar.

    Bake at the same temperature for another 30 minutes. Remove from the oven and let cool down briefly. Dust with icing sugar and serve. Serve with walnut ice cream.
