Summer fruits with cream glaze

Ingredients

Servings: 4
  • 2 TABLESPOONS flaked almonds
  • 2 ripe peaches
  • 300 g mixed berries (e.g. currants and blackberries)
  • 7-10 Tbsp Grease
  • 2 fresh eggs
  • 50 g Sugar
  • 1 package Bourbon vanilla sugar
  • 200 g Schmand

Directions

    Roast the almonds without fat until golden brown, take them out. Wash peaches, rinse berries. Sort the berries. Put 4 small currant panicles aside. Sort the rest of the currants and remove from the stalks.

    Halve the pfi rsiche, stone and cut into slices.

    Mix the fruits. Divide into 4 greased ovenproof trays. Beat the eggs, sugar and vanilla sugar with the whisk of the hand mixer until creamy. Stir in sour cream. Spread on the fruits and bake under the hot grill or in the oven at high heat for 3-5 minutes until golden brown.

    Sprinkle with almonds and decorate with the remaining currant panicles.
