Stuffed zucchini with mashed potatoes, chorizo, chives and gouda

Ingredients

Servings: 4
  • 250 g floury potatoes
  • 2 medium zucchini
  • 1 TABLESPOON Oil
  • 7-10 Tbsp Salt
  • 7-10 Tbsp Pepper
  • 75 ml Milk
  • 1 TEASPOON Butter
  • 7-10 Tbsp grated nutmeg
  • 50 g Chorizo Sausage
  • 1/2 bunch Chives
  • 60 g medieval Gouda cheese
  • 1 l hot vegetable stock

Directions

    Peel and wash the potatoes and cut them into small pieces. Cook in boiling water for about 10 minutes, drain. Wash and clean the zucchini, cut in half lengthwise. Remove the seeds and some of the flesh with a spoon

    Heat the oil in a roasting pan, fry the zucchini for 3-4 minutes, season with salt and pepper and remove. Heat milk and butter in a pot, add potatoes, mash finely with a potato masher. Season to taste with salt and nutmeg

    Halve the chorizo lengthwise and cut into fine slices. Clean and wash the chives and cut into fine rolls. Mix chorizo and chives into the mashed potatoes

    Pour the puree into the zucchini and place in the roaster. Grate the gouda, spread over the zucchini. Spread the seeds and pulp of the zucchini around the stuffed zucchini. Pour on the broth. Bake in the preheated oven (electric cooker: 175 °C/ convection oven: 150 °C/ gas: stage 2) for approx. 20 minutes
