Ingredients

  • 100 g Butter
  • 70 g Icing sugar
  • 175 g Flour
  • 1 Egg yolk (size M)
  • 2 sheets Gelatine
  • 300 g Vanilla Quark
  • 1 package Vanillin sugar
  • 250 g Whipped cream
  • 200 g Strawberries
  • 2 TABLESPOONS Erdbeergelee
  • 7-10 Tbsp Flour
  • 7-10 Tbsp Grease
  • 7-10 Tbsp Cling film
  • 7-10 Tbsp Aluminium foil
  • 7-10 Tbsp Dried peas

Directions

    Cut butter into pieces. Put the butter, sugar, flour and egg yolk in a bowl and knead first with the dough hooks of the hand mixer, then with your hands to a smooth dough. Wrap dough in cling film and chill for about 30 minutes. Roll out the dough on a floured work surface approx. 2 mm thin and cut out circles (12 cm Ø). Knead dough sections again, roll out and cut out. In total you should get 9 circles.

    Lightly grease greased tartlet cups (10 cm Ø) and line them with the circles. Cut off any protruding edges. Prick the dough several times with a fork, then line with aluminium foil and fill with dried peas. Bake in the preheated oven (electric cooker: 200 °C/ convection oven: 175 °C/ gas: level 3) for 12-15 minutes. Take the tartlets out of the oven and let them cool down for about 10 minutes. Remove dry peas and foil. Remove the tartelettes from the tin and let them cool on a cake rack. Soak the gelatine in cold water. Mix quark and vanillin sugar. Squeeze the gelatine and dissolve in a small pot. Stir in 3 tablespoons of quark, then stir into the remaining cream. Whip cream until stiff and fold in.

Cut remaining strawberries into thin slices. Place one small strawberry in the middle of each tartlet and spread the slices around it. Heat the jelly, stir until smooth. Brush the strawberries with the jelly and put them in a cool place
