Strawberry puff pastry particles

Ingredients

  • 1 pack of (300 g; 6 slices) deep-frozen puff pastry
  • 500 g Strawberries
  • 1 Egg yolk (size M)
  • 1 TABLESPOON Milk
  • 1 TABLESPOON flaked almonds
  • 1 TABLESPOON crushed pistachios
  • 7-10 Tbsp cores
  • 500 g Low-fat curd
  • 200 g low-fat cream cheese
  • 75 g Sugar
  • 1 TEASPOON Lemon juice
  • 50 g Whipped cream
  • 50 g Strawberry Jam
  • 1 TEASPOON Icing sugar
  • 7-10 Tbsp Lemon balm

Directions

    Defrost puff pastry sheets at room temperature for about 20 minutes. In the meantime, wash, clean and drain the strawberries and cut them in half or quarters as desired. Halve the puff pastry sheets and cut four of the resulting squares in half to form triangles.

    Place the puff pastry on a baking tray lined with baking paper and bake in a preheated oven (electric: 200 °C/ gas: level 3) for about 15 minutes. Whisk the egg yolk and milk and brush the dough pieces with it about 5 minutes before the end of the baking time.

    Sprinkle 4 triangles with flaked almonds, the rest with pistachios. In the meantime mix quark, cream cheese, sugar, lemon juice, cream and strawberry jam. Fold in the strawberries. Take the puff pastry out of the oven and let it cool down.

    Place the strawberry cream on the squares, place the triangles on top, dust with icing sugar and serve decorated with lemon balm as desired.
