Ingredients

  • 4 Eggs (size M)
  • 200 g Sugar
  • 1 pinch Salt
  • 125 g Flour
  • 1 TEASPOON Baking Powder
  • 400 g Strawberry Jam
  • 600 g Strawberries
  • 5 sheets Gelatine
  • 500 g Whipped cream
  • 500 g Mascarpone cream cheese
  • 7-10 Tbsp squeezed juice of 1 lemon
  • 7-10 Tbsp Sugar
  • baking paper

Directions

    Separate the eggs for the sponge roll. Beat egg whites until stiff. Add 75 g sugar and salt. Stir in egg yolks one after the other. Mix flour and baking powder, sieve over the egg cream and fold in carefully. Spread evenly on a baking tray (32 x 39 cm) lined with baking paper. Bake in a preheated oven (electric cooker: 200 °C/ convection oven: 175 °C/ gas: see manufacturer) for approx. 10 minutes.

    Turn the sponge plate immediately onto a tea towel sprinkled with sugar, remove the baking paper. Stir 300 g jam until smooth. Spread the sponge cake with it, roll it up from the long side, let it cool down. Cut the edges of the sponge roll smooth. Cut the roll into 18 slices (approx. 2 cm each). Line a springform pan (26 cm Ø) with the slices. Place approx. 11 slices on the bottom and 7 slices on the edges.

    Wash the strawberries, put 2 aside for decoration, clean the rest and cut into slices. For the cream, soak gelatine in cold water. Whip the cream until stiff. Stir mascarpone with 125 g sugar and lemon juice until smooth. Squeeze the gelatine, dissolve carefully. Stir in 2-3 tbsp. cream, then stir everything into the rest of the cream. Fold in the cream. Fill about half of the cream into the mould, smooth it down. Spread about half of the strawberries on top. Carefully add the rest of the cream and spread. Spread the rest of the strawberries on top. Cover and chill for about 2 hours.

    Heat 100 g jam, stir until smooth. Just before serving, spread the jam on the strawberries. Decorate with the strawberries set aside
