Strawberry cold dish with almond snow dumplings

Ingredients

  • 500 g Strawberries
  • 1/2 l apple juice
  • 2 TABLESPOONS + 50 g sugar
  • 1 package Red fruit jelly powder
  • 1 Protein (size M)
  • 1 pinch Salt
  • 20 g flaked almonds

Directions

    Wash, clean and quarter the strawberries. Boil up apple juice and 2 tablespoons of sugar. Purée half of the strawberries and add to the apple juice. Stir red fruit jelly powder with 6 tablespoons of water until smooth and pour into the apple juice while stirring. Bring to the boil and simmer for 1 minute.

    Put the strawberry cold dish in a cool place. Beat egg white until stiff, add 50 g sugar and salt. Beat until the mixture is shiny and the sugar has dissolved. Heat water in a wide pot, do not let it boil. Use 2 teaspoons of the meringue to make dumplings and slide them into the boiling water. Put the lid on and let it simmer for about 5 minutes. Roast the almonds in a pan without fat, take them out and let them cool down. Stir the rest of the strawberries into the cold dish. Turn the snow dumplings in the almonds.
