Peel and seed the cucumber, wash the European strawberries and remove the middle part. Cut both into cubes of the same size, then salt the cucumber slightly. Chop mint and mix with the juice of a lemon and the diced strawberries and cucumber (if you like, you can also add fresh coriander here). Fry the sardines with salt and pepper.
Arrange the salad on plates, place 2 sardine fillets on top, drizzle with olive oil and garnish with balsamic vinegar. Tip: A slice of toast with tapenade goes very well with this.
