Stracciatella quark with summer berries

Ingredients

Servings: 4
  • 500 g mixed berries (e.g. strawberries, blueberries, currants and raspberries)
  • 6 TABLESPOONS Sugar
  • 2 TABLESPOONS Lemon juice
  • 200 g Whipped cream
  • 1 package Vanilla sugar
  • 500 g Low-fat curd
  • 50 g Grated chocolate

Directions

    Wash strawberries, blueberries and currants. Clean the strawberries and cut them into halves or quarters depending on size. Strip currants from the panicles. Sort the raspberries. Mix the whole berries with 2 tablespoons of sugar and lemon juice.

    Whip the cream until stiff and allow the vanilla sugar to trickle in. Mix quark and 4 tablespoons of sugar. First stir in the chocolate shavings, then fold in the cream. Arrange quark with berries in a large bowl.
