Drain the mandarins and collect the juice
Mix the quark, milk and 3 tbsp. mandarin juice. Season to taste with sugar, vanilla sugar and rum. Chop the chocolate coarsely and stir into the quark except for a little bit for sprinkling.
Fold mandarins, except some for decoration, under the stracciatella quark. Divide into four dessert bowls. Sprinkle with remaining chocolate. Spread the rest of the tangerines and possibly orange fillets on top. Decorate with lemon balm
-Instead of rum, you can also season the quark with some rum flavour
-The dessert becomes even finer if you add approx. 100 g whipped cream to the quark
-You can replace the chocolate with finished chocolate shavings (e.g. dark chocolate) or chocolate sprinkles
