Ingredients

  • 100 g Dark chocolate
  • 125 g dried sour cherries
  • 3 Protein (size M)
  • 1 pinch Salt
  • 150 g Sugar
  • 100 g ground almonds (without skin)
  • 30 Baking wafers (50 mm ø)
  • 2 TABLESPOONS Chocolate shavings
  • baking paper

Directions

    Finely chop the chocolate and cherries, set aside 25 g of cherries for sprinkling. Beat the egg whites and salt with the whisks of the hand mixer until very stiff. Gradually add the sugar, so that the mixture is firm and shiny

    Add almonds, chocolate and cherries to the beaten egg white. Spread the wafers on 2 baking trays lined with baking paper. Spread the meringue mixture on the wafers with the help of 2 teaspoons. Sprinkle with cherries and chocolate raspberries

    Bake one after the other in a preheated oven (electric oven: 150 °C/ convection oven: 125 °C/ gas: stage 1) for 12-15 minutes. Let them cool down
