Clean and wash the salad, pluck into bite-sized pieces and drain well in a sieve. Clean, wash and slice the radishes. Clean, wash and halve tomatoes. Peel onions and cut into fine rings. Wash parsley and basil, dab dry and cut the leaves into fine strips. Mix vinegar, salt, pepper, sugar and mustard vigorously with the whisks of the hand mixer.
Add the oil and stir in the herbs. Mix salad, radishes, tomatoes and onions. Pour the vinaigrette over it and mix well. Serve in four deep plates and garnish with basil as desired. Tastes good with farmhouse bread
