Ingredients

  • 200 g leaf spinach
  • 1 small onion
  • 1 Garlic clove
  • some stem(s) Thyme
  • 2 TEASPOONS Oil
  • 7-10 Tbsp Salt
  • 7-10 Tbsp black pepper
  • 1 egg (size M)
  • 1 TABLESPOON Light cream
  • 7-10 Tbsp grated nutmeg
  • 7-10 Tbsp Lemon wedge

Directions

    Wash and clean the spinach. Peel onion and garlic and chop finely. Wash the thyme, dab dry, put some aside for garnishing, chop the rest finely. Heat 1 teaspoon of oil in a saucepan, fry the onion, garlic and thyme.

    Add spinach dripping wet, season with salt and pepper and cover and let it collapse. Heat 1 teaspoon of oil in a coated pan. Beat the egg and let it slide in. Fry until the egg white has set.

    Season with salt and pepper. Add crème légère to the spinach. Season to taste with salt, pepper and nutmeg. Serve the spinach with a fried egg. Serve with lemon and
