Ingredients

  • 2-3 small gherkins (from the jar)
  • 1 small sour apple
  • 1-2 TEASPOONS Lemon juice
  • 4 tablespoons (75 g) Silver onions (from the glass)
  • 250 g smoked trout fillets
  • 3-4 Tbsp Salad cream
  • 3-4 Tbsp Tomato ketchup
  • 3-4 Tbsp Orange juice
  • 7-10 Tbsp salt, pepper, paprika
  • 2-3 stem(s) Dill
  • 7-10 Tbsp Lemon and apple slices

Directions

    Cut the gherkins into slices. Wash the apple and dab dry. Remove the core. Cut the fruit flesh into fine cubes and sprinkle with lemon juice immediately

    Mix silver onions, cucumber and apple. Divide trout fillets into bite-sized pieces and carefully fold in

    Mix salad cream, ketchup and orange juice until smooth. Season with salt, pepper and paprika. Wash the dill, pluck the flag from the stalks. Arrange cocktail on plates. Spread some sauce over them. Sprinkle dill on top. Garnish the cocktail with slices of lemon and apple. Add the rest of the sauce.

    If you prefer the sauce to be hearty and not fruity, you can use 4 tablespoons of cucumber stock instead of the orange juice
