Spicy red cabbage salad with feta

Ingredients

Servings: 4
  • 2-3 TABLESPOONS (30 g) Pine nuts
  • 200 g Feta or sheep's cheese
  • 175 ml Orange juice
  • 3 TABLESPOONS Balsamic vinegar
  • 1 pinch sugar, salt, pepper
  • 4 TABLESPOONS Oil (e.g. olive oil)
  • 1 (approx. 750 g) small red cabbage
  • 1 carrot, 1/2 head iceberg lettuce
  • 3-4 Tbsp Raisins
  • 7-10 Tbsp Marjoram and orange slices

Directions

    Roast pine nuts in a pan without fat until golden brown. Remove. Dice cheese

    Mix orange juice, vinegar, sugar, salt and pepper. Beat the oil well into the mixture

    Clean, quarter and wash the cabbage. Cut out the stalk. Chop cabbage into strips. Peel and wash the carrot and cut it into sticks. Clean, wash and cut salad into strips. Mix vegetables and marinade. Fold in cheese, pine nuts and raisins. Leave to stand for about 30 minutes. Season the salad again and garnish with marjoram and orange wedges if necessary.

    Red discolored hands and cutting boards will be clean again if you rub them with some lemon juice
