Cleaning and washing vegetables. Chop peppers and tomatoes into pieces, cut zucchini into slices. Peel onions, dice them roughly. Peel garlic and chop finely. Cut mozzarella into cubes
Heat the oil in a wide saucepan. Fry the onions, garlic, peppers and zucchini for 5-8 minutes. Add the tomatoes. Season with salt, pepper, sweet paprika and dried herbs. Cover and stew for about 10 minutes.
Approx. 2 minutes before the end of the cooking time, stir in mozzarella and let it melt. Season vegetables with salt, pepper and sweet paprika. Served with: baguette or rice
The vegetables are also delicious cold. Then fold in the mozzarella afterwards, possibly drizzle some olive oil over it
