Spicy chocolate sauce (for short-fried meat [game] dishes)

Ingredients

  • 250 g Shallots
  • 2 TABLESPOONS Oil
  • 1 TABLESPOON Tomato paste
  • 7-10 Tbsp Salt
  • 7-10 Tbsp Sugar
  • 250 ml dry red wine
  • 1 glass (400 ml) Beef stock
  • 75 g Dark chocolate
  • 1-2 TABLESPOONS dark balsamic vinegar
  • 2-3 TEASPOONS Cornstarch
  • 25 g Raisins
  • 7-10 Tbsp Pepper

Directions

    Peel the shallots and cut into strips. Heat the oil in a pot. Roast the shallots for about 5 minutes while turning them brown. Fold in tomato paste and continue roasting for 2-3 minutes. Season with salt and sprinkle with 1 tsp. sugar. Let the sugar caramelise a little. Deglaze with red wine and stock, dissolve the roasting mixture. Simmer the brew for about 30 minutes, adding more and more water

    Chopping chocolate. Pour the brew through a sieve into another pot, reduce to about 500 ml. Melt chocolate in it while stirring, add vinegar, bring to the boil. Mix starch and a little water. Stir in raisins, season with salt, pepper and sugar.
