Wash the zucchini, grate dry and cut into thin sticks. Place in a sieve, sprinkle with 1 pinch of salt and drain. Peel and finely dice the shallot and garlic
Cook the pasta in boiling salted water according to the instructions on the packet. Heat the oil in a pan and sauté the onion and garlic until translucent. Add zucchini sticks and fry. Add cream, lemon zest and 3 tbsp. pasta water to the courgettes. Let simmer gently. Season to taste with salt and pepper
Cut the ham into thin strips. Peel the Parmesan cheese with a peeler. Drain the pasta, mix with the zucchini sauce, arrange on plates and sprinkle with ham and cheese
