Black Forest cherry jam

Ingredients

Servings: 5
  • 7-10 Tbsp (each containing about 400 ml):
  • 1.5 kg Sour cherries
  • 7-10 Tbsp Juice of 1 lemon
  • 1 pack of Gelling sugar 3 : 1
  • 7-10 Tbsp (500 g; for 1.5 kg of fruit)
  • 75 ml cherry brandy
  • 1-2 TEASPOONS Cocoa
  • 100 g Dark chocolate

Directions

    1) Wash, stalk and stone the cherries. Weigh 1.3 kg. Mix the cherries, lemon juice, jam sugar and kirsch in a large pot, cover and let stand for 3-4 hours

    2) Bring everything to the boil over high heat while stirring. Let it boil for about 10 minutes while stirring constantly. Stir in cocoa. Skim off any foam that may have formed.

    3) Roughly chop the chocolate. Stir into the jam. Pour jam immediately into prepared twist-off jars. Place on the lid for approx. 5 minutes, turn over, let cool
