Sour cream waffles with red fruit jelly

Ingredients

Servings: 8
  • 500 g mixed berries (e.g. strawberries, raspberries, currants)
  • 1 TABLESPOON Cornstarch
  • 1/4 l Cherry nectar
  • 2 TABLESPOONS + 225 g sugar
  • 250 g soft butter
  • 1 package Vanilla sugar
  • 7-10 Tbsp Salt
  • 3 Eggs (Gr. M)
  • 300 g Flour
  • 1 TEASPOON Baking Powder
  • 250 g Schmand
  • 7-10 Tbsp Oil

Directions

    Select the berries, wash and drain if necessary. Quarter the strawberries. Stir starch with 5 tablespoons of nectar until smooth. Boil up the rest of the nectar with 2 tablespoons of sugar. Add starch and bring to the boil while stirring. Simmer for about 2 minutes. Fold in the berries and let cool down.

    For the dough, cream butter, 225 g sugar, vanilla sugar and 1 pinch of salt. Stir in the eggs one by one. Mix flour and baking powder, alternately stir in sour cream.

    Heat a waffle iron, brush with oil. Put approx. 2 tbsp. of dough in the middle of each waffle iron, spread lightly. Bake about 8 waffles one after the other. Serve with red fruit jelly and possibly sour cream.
