Souflaki with halloumi tomato salad

Ingredients

  • 700 g Pork escalope
  • 2 Onions
  • 2 Spring onions
  • 1/2 bunch Oregano
  • 2 Garlic cloves
  • 11 TABLESPOONS Olive oil
  • 1 TEASPOON Java peppercorn
  • 7-10 Tbsp Salt
  • 7-10 Tbsp Juice of 1 lemon
  • 1 TABLESPOON Honey
  • 8 Tomatoes
  • 250 g Halloumi cheese (grilled Greek cheese; 43 % fat in dry matter)
  • 8 wooden skewers

Directions

    Wash the meat, dab dry and cut into cubes of approx. 2x2 cm. Peel and halve onions and cut them into strips. Clean and wash spring onions, halve them lengthwise and cut into pieces of about 3 cm. Put on 4 skewers diced meat and onion strips, on 4 meat and leek onion strips. Wash oregano, dab dry, pluck leaves from the stalks and cut into fine strips. Peel garlic and cut into slices.

    Mix 8 tablespoons olive oil with garlic, oregano, pepper and salt. Pour half over the skewers. Mix lemon juice with honey. Whip the rest of the olive oil mixture in a fine stream under the lemon juice. Wash the tomatoes, dab dry and cut into slices. Wash the tomatoes, dab dry and cut into slices. Cut the cheese into slices about 1 cm thick. Heat 2 tablespoons of olive oil in a pan. Fry the skewers on both sides for 6-8 minutes. Heat 1 tablespoon of olive oil in a frying pan. Fry the cheese for 2 minutes on both sides. Remove the cheese from the pan, cut it in half diagonally and arrange it on a plate with the tomato slices.

    Heat 2 tablespoons of olive oil in a pan. Fry the skewers on both sides for 6-8 minutes. Heat 1 tablespoon of olive oil in a frying pan. Fry the cheese for 2 minutes on both sides. Remove the cheese from the pan, cut it in half diagonally and arrange it on a plate with the tomato slices. Pour salad dressing over it. Arrange the skewers on the salad. Tsatsiki tastes good with it
