Mix flour, sugar and salt. Melt the fat, add 100 ml milk. Dissolve yeast in it. Add the lukewarm yeast mixture and eggs to the flour and work into a smooth dough with the dough hooks of the hand mixer. Cover and leave to rise in a warm place for about 1 hour.
Divide into about 30 pieces. Form each piece into a roll (1 cm Ø) on a floured work surface. Weave 3 rolls into a braid. Lay them inside each other to form nests. Cover and leave to rise for about 15 minutes. In the meantime whisk the egg yolk and 1 teaspoon of milk. Brush the nests with it and sprinkle with sugar crystals. Place on 2 baking trays lined with baking paper. Bake in the preheated oven (electric cooker: 200 °C/ convection oven: 175 °C/ gas: level 3) for 10-15 minutes. In the meantime knead marzipan and icing sugar.
