Short macaroni with feta cheese, peppers, romaine and frisée salad in balsamic marinade

Ingredients

Servings: 4
  • 250 g Mini penne noodles
  • 7-10 Tbsp Salt
  • 150 g Feta cheese
  • 1 big red pepper
  • 1 Onion
  • 4-5 Tbsp Balsamic vinegar
  • 7-10 Tbsp Pepper
  • 7-10 Tbsp Sugar
  • 4-5 Tbsp Olive oil
  • 100 g Frisée salad
  • 100 g Romaine lettuce

Directions

    Prepare the pasta in boiling salted water according to the instructions on the packet. In the meantime, dice the cheese. Clean, wash and cut the peppers into narrow strips. Peel and finely dice the onion. Drain noodles and rinse with cold water. For the vinaigrette, whisk vinegar, salt, pepper and sugar.

    Add oil drop by drop. Mix in the onion cubes. Mix the pasta, cheese and peppers with the vinaigrette and marinate for about 10 minutes. In the meantime clean and wash the salad, pluck it into pieces and fold it in. Season again with salt and pepper and arrange on plates
