Sherry vanilla cream

Ingredients

Servings: 4
  • 1 package Pudding powder "Vanilla" (for cooking; for 1/2 l milk)
  • 2 TABLESPOONS + 1 teaspoon sugar
  • 1/2 l Milk
  • 2-3 TABLESPOONS Sherry (medium)
  • 100 g Amarettini biscuits or sponge fingers
  • 4 TABLESPOONS Orange juice (e.g. freshly squeezed)
  • 4 TSP flaked almonds
  • 100 g Whipped cream
  • 7-10 Tbsp Mint

Directions

    Mix the pudding powder, 2 tablespoons of sugar and 6 tablespoons of milk until smooth. Boil up the remaining milk. Stir in the pudding powder and simmer everything for another 1 minute. Season to taste with sherry and let it cool down

    Pour Amarettini, except for 4 pieces, into 4 dessert glasses. Sprinkle 1 tablespoon of juice over each. Add the almonds. Stir the pudding again and pour it on top. Put them in a cold place

    Whip cream and 1 tsp. sugar until stiff. Decorate the cream with a large tuff or blob of cream. Decorate with remaining biscuits and possibly mint
