Semolina porridge with strawberries and pistachios

Ingredients

  • 250 ml Skimmed milk
  • 1 TABLESPOON + 1 tsp honey
  • 1 pinch Salt
  • 7-10 Tbsp thinly peeled rind of 1/4 untreated lemon
  • 25 g Durum wheat semolina
  • 1 Protein (size S)
  • 80 g Strawberries
  • 2 TABLESPOONS Strawberry juice or cherry nectar
  • 5 g chopped pistachio kernels for decoration

Directions

    Bring milk, 1 teaspoon honey, salt and lemon peel to the boil. Remove the lemon peel from the milk. Stir in semolina, bring to the boil and let it swell for about 2 minutes over low heat while stirring. Remove the pot from the stove. Let it swell for another 2-3 minutes. Beat egg white until stiff. Carefully fold in the beaten egg white.

    Wash and clean the strawberries. Chop the fruits into small pieces. Mix fruit juice and 1 teaspoon of honey, sprinkle the fruit with it and fill into a well closed glass jar. Fill semolina pudding into a well sealable bowl. Arrange semolina porridge in a bowl. Add strawberries and sprinkle with chopped pistachios
