Semolina porridge with chocolate drops and Amarettini

Ingredients

  • 1 l Milk
  • 1 pinch Salt
  • 50 g Sugar
  • 1 package Vanillin sugar
  • 7-10 Tbsp pulp of 1 vanilla pod
  • 120 g Durum wheat semolina
  • 3 Eggs (size M)
  • 50 g Amarettini
  • 75 g Chocolate Droplets
  • 7-10 Tbsp Mint and Amarettini

Directions

    Put milk, salt, sugar, vanillin sugar and vanilla pulp in a pot and bring to the boil. Stir in semolina, bring to the boil and allow to swell over low heat while stirring for about 2 minutes. Remove from the stove, allow to swell for a further 2-3 minutes. In the meantime, separate the eggs. Whisk the egg yolks with a fork in a small bowl. Stir in 2 tablespoons of semolina. Then stir into the semolina.

    Coarsely crumble the Amarettini. Carefully fold the amarettini and chocolate drops into the semolina. Beat the egg white with the whisk of the hand mixer until stiff. Carefully fold the beaten egg white into the semolina in portions so that the beaten egg white is not destroyed. Pour into 4 deep plates. Serve decorated with mint and Amarettini
