Semolina flummery

Ingredients

Servings: 4
  • 2 Eggs (size M)
  • 7-10 Tbsp Salt
  • 5 TABLESPOONS + 600 ml milk
  • 1/2 Vanilla pod
  • 100 g Common wheat semolina
  • 400 g mixed berries (e.g. red currants, raspberries, blackberries, strawberries, blueberries)
  • 8 TSP demerara sugar

Directions

    Separate eggs. Beat the egg whites and 1 pinch of salt until stiff with the whisk of the hand mixer. Mix the egg yolks with 5 tbsp. milk. Cut the vanilla pod lengthwise. Scrape out the pulp. Boil up 600 ml milk and vanilla pulp in a pot. Sprinkle semolina and let it simmer for about 3 minutes at medium heat while stirring. Remove the pot from the stove. Quickly stir in the egg yolk mixture. Fold in the beaten egg white. Spread the mixture on 4 ovenproof baking dishes (7 cm Ø). Let cool down for about 30 minutes.

    Sort the berries. Wash and clean if necessary. Sprinkle each flummery with 2 teaspoons of brown sugar and caramelise with a gas burner until golden brown. Decorate with berries
