Dice the ham. Remove sausage from skin and cut into slices. Whisk eggs, salt and pepper
Heat 1 tablespoon of oil in a small pan (approx. 20 cm Ø). Pour in half an egg. Spread half sausage and half ham on top. Stir until the egg begins to curdle. Then cover and allow to set completely over medium heat for 3-4 minutes.
Remove and keep warm. Process remaining ingredients in the same way. Cut scrambled eggs into pieces. Serve hot or cold
