Clean, wash and cut the spring onions into rings. Whisk eggs and milk. Season with salt and pepper. Heat oil in a pan. Pour in egg milk and let it simmer at low heat.
Push together several times with a spatula. Sprinkle with spring onions. Spread bread with fat. Cover with salad leaves and slices of salami. Add some scrambled eggs and arrange on a plate with lettuce, tomato and parsley.
