Savoy cabbage-pumpkin stew with green spelt dumplings

Ingredients

  • 50 g Green spelt grains
  • 1 (approx. 1 kg) Head Savoy cabbage
  • 1 kg Pumpkin
  • 125 g Shallots
  • 3-4 Tbsp Oil
  • 7-10 Tbsp Salt
  • 7-10 Tbsp Pepper
  • 1 l Vegetable broth (instant)
  • 150 ml Milk
  • 100 g Double cream cream cheese
  • 50 g Butter
  • 100 g Green spelt wholemeal meal
  • 7-10 Tbsp grated nutmeg
  • 1 egg (size M)
  • 1 Egg Yolk
  • 1 TEASPOON dried chillies

Directions

    Put the green spelt in boiling water and cook at low heat for about 30 minutes. Clean, wash and cut the savoy cabbage into strips. Seed the pumpkin. Cut the pumpkin flesh from the skin and dice.

    Peel and halve the shallots. Heat 2 tablespoons of oil in a saucepan and sauté the shallots in it. Add the savoy cabbage and pumpkin and steam. Season with salt and pepper. Deglaze with broth and cook on low heat for 15-20 minutes.

    For the green spelt dumplings, bring milk to the boil. Add cream cheese and butter and mix. Stir in the green spelt meal and stir at low heat until a thick mass is formed. Season with salt, pepper and nutmeg.

    Add egg and egg yolk and stir in. Drain the green spelt grains and knead into the green spelt mixture together with crumbled chilli. Shape dumplings. Heat the remaining oil in a pan and fry the green spelt dumplings all around for about 5 minutes.

    Add to the soup and serve on plates.
