Peel the skin off the sausage. Cut all sausage types into thin slices. Clean and wash spring onions and cut into rings. Peel onions and cut into thin rings. Mix both kinds of mustard, vinegar, salt and pepper. Fold in oil in a thin stream.
Mix the sausage, onions and vinaigrette and leave to stand in the refrigerator for about 1 hour. Wash the herbs, dab dry. Coarsely chop parsley, cut chives into small rolls. Mix the herbs into the salad and season to taste. Pretzels taste good with it
