Whisk 1 egg, salt and 125 ml milk. Add 80 g flour with the whisk of the hand mixer. Let dough rest for about 15 minutes. Heat 1 teaspoon of oil in a coated pan (approx. 26 cm Ø) and bake 3 pancakes one after the other. Grate cheese. Melt the fat. Stir in 50 g flour and sweat for 3-4 minutes.
Pour in 500 ml milk and stock and bring to the boil while stirring. Add cheese and simmer for 3-4 minutes, season with salt and pepper. Remove the sauce from the heat and stir in 3 eggs one by one and quickly. Clean the spinach and wash it thoroughly. Peel and finely chop the onion. Heat 1 teaspoon of oil. Fry the diced onion until transparent. Add the spinach, let it collapse and season to taste with salt, pepper and nutmeg. After about 4 minutes, remove the spinach and let it drain in a sieve. Wash the tomatoes, grate dry and cut in half. Halve the kielbasa lengthwise. Place 1 pancake on the bottom of a round casserole dish (approx. 26 cm Ø). Spread some spinach on the pancake.
