Salmon with Asian broccoli

Ingredients

Servings: 4
  • 7-10 Tbsp Salt
  • 7-10 Tbsp Pepper
  • 200 g Rice (e.g. wholemeal rice)
  • 500 g Broccoli
  • 1 medium onion
  • 1 red chilli pepper or
  • 7-10 Tbsp Sambal Oelek
  • 500 g Salmon fillet
  • 1 TABLESPOON Lemon juice
  • 2 TABLESPOONS Sesame
  • 2 TABLESPOONS Oil (e.g. rape seed oil)
  • 2-3 TABLESPOONS Soy sauce

Directions

    Well 1⁄2 l Boil up salted water. Cover the rice and cook over low heat for about 40 minutes (see also package instructions).

    Clean and wash the broccoli and cut it into small florets. Peel and finely chop the onion. Clean the chilli pepper, cut lengthwise, remove seeds, wash and finely chop.

    Wash the fish, dab dry and cut into 4 pieces. Sprinkle fish with lemon juice.

    Roast sesame seeds in a pan without fat, remove. Heat the oil in the pan. Fry fish in it for 3-4 minutes on each side. Season with salt and pepper.

    Cover the broccoli florets and cook for about 5 minutes in a little boiling salted water.

    Keep fish warm. Sauté diced onions in hot frying fat until translucent. Steam chilli briefly. Deglaze with 3-4 tbsp. water and soy sauce and simmer briefly. Drain broccoli and toss in. Drain rice if necessary.

    Do everything. Sprinkle with sesame seeds.
