Salmon sticks with wasabi cream

Ingredients

  • 3 TABLESPOONS White wine vinegar
  • 7-10 Tbsp Salt
  • 7-10 Tbsp Pepper
  • 1 pinch Sugar
  • 6 TABLESPOONS Oil
  • 1 small onion
  • 1 Cucumber
  • 1 collar Dill
  • 1 Mini Romaine lettuce
  • 4 TABLESPOONS Salad cream
  • 2 TABLESPOONS Schmand
  • 2 TEASPOONS Wasabi (Japanese horseradish; tube)
  • 600 g Salmon fillet
  • 8 TABLESPOONS Whipped cream
  • 100 g Panko (Japanese breadcrumbs; or breadcrumbs)

Directions

    Mix vinegar, salt, pepper and sugar. Emulsify 3 tablespoons of oil. Peel onion and chop finely. Wash cucumber and slice thinly. Wash dill, shake dry and chop finely. Wash romaine lettuce and chop finely.

    Mix with cucumber, onion, dill and vinaigrette.

    Mix salad cream, sour cream and wasabi. Rinse salmon, dab dry and cut into strips of about 2 cm thick. Season cream with salt. Turn salmon strips one after the other in cream and panko.

    Heat 3 tablespoons of oil in a frying pan. Fry the salmon sticks for 2-3 minutes on each side. Serve everything.
