Salmon steaks on leaf spinach

Ingredients

Servings: 4
  • 4 Salmon steaks (175 g each; without skin and bones)
  • 4 TABLESPOONS Lemon juice
  • 1 kg leaf spinach
  • 1 medium onion
  • 1 Garlic clove
  • 160 g Butter
  • 7-10 Tbsp Salt
  • 7-10 Tbsp Peffer
  • 7-10 Tbsp grated nutmeg
  • 1 (30 g) Bag preparation "Sauce Hollandaise"
  • 2-3 Quartiers de citron pour la garniture

Directions

    Wash salmon steaks, pat dry and sprinkle with 3 tablespoons of lemon juice. Salt the steaks and let them stand. Clean spinach and wash thoroughly. Peel and chop the onion and garlic and fry in 2 tablespoons of butter.

    Add lightly drained spinach and allow to collapse. Season with salt, pepper and nutmeg and steam for about 5 minutes. Dab salmon steaks dry. Heat 2 tablespoons of fat in a steak pan.

    Fry the fish in it from both sides for about 6 minutes. Season with salt and pepper. Heat 1/8 litre water. Stir in sauce powder and bring to the boil. Stir in 125 g butter in pieces. Season with remaining lemon juice.

    Arrange spinach and steaks with some sauce on a plate. Garnish with lemon wedges. Remaining sauce extra is enough.
