Salmon-dill tartar with apple

Salmon and apple cubes are well prepared for the feast. Seasoned with lime juice and dill, they wait in the refrigerator for the first round.

Ingredients

Servings: 8
  • 2 Organic limes
  • 2 Apple (e.g. Granny Smith)
  • 7-10 Tbsp Sugar
  • 7-10 Tbsp Salt
  • 7-10 Tbsp Pepper
  • 2 TABLESPOONS good olive oil
  • 2 Federation Dill
  • 800 g Salmon fillet (without skin; sushi quality)

Directions

    Wash the limes in hot water and dab dry. Finely grate a total of 1-2 teaspoons of the peel. Squeeze the limes. Wash apples, quarter them and remove seeds.

    Dice apples finely. Mix with lime juice and zest, 3 tsp. sugar and a little salt. Stir in oil.

    Wash the dill, shake dry and cut finely. Rinse salmon cold, dab dry and chop finely. Stir dill into the apple mixture. Season to taste with salt and pepper. Keep covered and cool until serving. Pour into glasses. Garnish as desired with dill and lime wedges.
