Salmon chops with coloured rice

Ingredients

Servings: 4
  • 2 TABLESPOONS liquid honey
  • 1 TABLESPOON Soy sauce
  • 7-10 Tbsp Juice of 1 lime
  • 4 TABLESPOONS oil, pepper
  • 4 Salmon chops (approx. 175 g each)
  • 200 g Rice (e.g. basmati)
  • 7-10 Tbsp Salt
  • 200 g green beans (frozen or fresh)
  • 1 medium-sized carrot
  • 1 Onion (e.g. red)

Directions

    Mix honey, soy sauce, 2 tablespoons lime juice, 2 tablespoons oil and pepper. Wash salmon and pat dry. Brush with the marinade and let it stand for about 20 minutes

    Cover the rice and cook it in about 400 ml boiling salted water at low heat for about 20 minutes

    Clean and wash fresh beans. Cut the beans into small pieces. Cook in boiling salted water for about 10 minutes. Peel, wash and slice the carrot. Add to the beans and cook for about 7 minutes.

    Peel onion and cut into fine rings. Dab salmon. Fry in 2 tablespoons of hot oil on each side for 4-5 minutes. Fry the onion briefly. Season with salt

    Drain the vegetables. Mix with rice, onion and remaining lime juice. Season to taste with salt and pepper. Serve with the salmon chops

    Drink: cool white wine
