Ingredients

  • 10 small onion (about 300 g)
  • 6–7 Garlic cloves
  • 2 dried bay leaves
  • 2 TABLESPOONS Lemon juice
  • 6 TABLESPOONS Olive oil
  • 1 TEASPOON dried oregano
  • 7-10 Tbsp Cayenne pepper
  • 800 g Hoof steak (in one piece)
  • 1 collar (approx. 150 g) Spring onions
  • 1 package (500 g) chunky tomatoes
  • 7-10 Tbsp Salt
  • 1/2 bunch Parsley and Dill
  • 1/2 Pot of coriander
  • 1 (approx. 120 g) red pointed paprika
  • 16 (approx. 350 g) small tomatoes
  • 8 Shashlik skewers

Directions

    Peel 2 onions and chop finely. Peel garlic and chop 2-3 cloves. Crumble bay leaf and mix with lemon juice, 4 tbsp. olive oil, oregano, some cayenne pepper, chopped garlic and diced onions. Cut meat into large cubes (3-4 cm), place in a bowl and mix well with the marinade. Cover and marinate for several hours or overnight.

    For the shashlik sauce, clean and wash the spring onions and finely chop 3 spring onions. Chop the remaining garlic cloves as well. Heat 2 tablespoons of olive oil, fry the chopped spring onions and garlic. Add the chopped tomatoes, bring to the boil and simmer for 4-5 minutes. Season to taste with salt and cayenne pepper and let it cool down. Wash parsley, dill and coriander, shake dry and chop except for a little bit for garnishing. Stir about half of the chopped herbs into the cold tomato sauce. Put the remaining herbs in a small bowl. Clean, wash and cut the peppers into rings. Arrange in a small bowl together with the remaining spring onions. Peel and halve 8 onions.

Drain marinated meat cubes a little and put them on 8 skewers alternating with tomatoes and onions. Grill on the preheated grill or in a greased grill pan while turning for about 10 minutes, sprinkle with salt. Arrange the ready skewers with shashlik sauce, chopped herbs, paprika and spring onions. Garnish with coriander. Flatbread tastes good with it
