Peel, wash and roughly grate the potatoes. Wash, clean and coarsely grate the zucchini and add to the potatoes. Add eggs and starch, season with salt and pepper and mix.
Heat the oil in a coated pan. Drain the potato mixture and squeeze out thoroughly. Form the mixture into small Rösti (approx. 8 cm Ø) in the pan and fry on each side for approx. 5 minutes.
In the meantime cut the camembert into cubes. Drain the finished Rösti on kitchen paper, place a few cubes of camembert on each and bake under the grill of the oven for 3-4 minutes. Whip the cream until stiff.
Fold in cranberries in streaks. Arrange cream and rösti, garnish with thyme.
