Rooibos sorbet with pineapple

Ingredients

Servings: 4
  • 2 TABLESPOONS Rooibos tea
  • 200 g Sugar
  • 1 package Vanillin sugar
  • 1 Protein (size M)
  • 400 g Pineapple
  • 1 untreated orange
  • 2 TABLESPOONS Honey
  • 7-10 Tbsp Coconut chips and physalis

Directions

    Pour 500 ml of boiling water over the tea and let it steep for at least 10 minutes. Dissolve sugar and vanillin sugar in the hot tea. Put the tea in a cool place. Freeze cold tea and stir every 15 minutes until it is almost frozen. Beat the egg whites with the whisks of the hand mixer until stiff. Stir the beaten egg whites into the sorbet and freeze again.

    Peel the pineapple and cut the pulp into pieces. Wash the orange hot, grate dry and cut into slices. Use an ice-cream scoop to portion the sorbet into balls. Arrange prepared fruit and sorbet balls. Decorate with coconut and physalis and sprinkle with honey
